The food menu is a delight, too, with its neo-traditional character and the variously excellent produce prepared with the utmost care. They inspire the chef to conjure up two excellent versions of foie gras (as a terrine and cooked a la plancha, served as a single starter). He also has a flair for local fare, turning Troyes AAAAA sausage into a premium dish. The service is in keeping with the rest of the outfit – attentive and very professional.
